My favorite past time is cooking! And do I
collect cookbooks. So we decided that we needed
a recipe page to share some of our favorite recipes
with everyone as well as have others share their

Norma's Potato Salad
This recipe came from a restaurant in Metropolis, Illinois. When I was little, before
the days of fast food places, this is where I always wanted to eat....chicken salad
sandwiches and potato salad. Hope you try and love it like our family does.

1/4 cup grated onions
5 medium potatoes
2 oz pimientos finely chopped and well drained
5 hard boiled eggs grated
2 tablespoons vinegar
scant 1/3 cup sugar
salt and pepper to taste
Hellman's Mayonnaise
Place potatoes in large pot and cover with water. Boil until tender but not cooked
to pieces. Drain. Cool, peel then grate potatoes on large section of hand grater.
Add vinegar and sugar to potatoes. Stir lightly then add grated onion, pimientos,
grated eggs and salt/pepper. Add Hellmans, enough to blend all ingredients
together. Approx 1/2 cup. Maybe more, maybe less....
On serving plate place leaves of lettuce. With a scoop or dipper, place potato salad
on leaves. Refrigerate until ready to serve.
